Colombia Marisol Ñañez Pink Bourbon
A honey-processed Pink Bourbon characterized by exceptional balance, a floral aroma, and a distinct, clean sweetness. Medium-bodied and smooth, the flavor is dominated by notes of citrus, spice, and flowers, with a medium-high, pleasant acidity. This coffee is roasted exceptionally light to retain all its complex qualities.
Processing (Honey):

Primary Fermentation: Whole, ripe coffee cherries undergo a 40-hour fermentation process to build the texture of the brew.

Depulping and fermentation in bags: After removing the skin, the beans and pulp are placed in bags for another 30 hours to enhance sweetness and fruity notes.

Semi-washed: The coffee is quickly rinsed, leaving some of the natural sugars on the beans (typical for the honey process).

Drying: The process takes 21 to 22 days under controlled conditions until optimal humidity is achieved.
Unflavored coffee, whose flavor profile comes entirely from the type of grain used, country of origin, variety, and processing.

Marisol's Story
It's a story about returning to one's roots. Marisol's father started from scratch, buying a quarter of a hectare of land after fleeing conflict zones. Marisol helped in the fields from a young age, and at the age of 10, she received her first plot of land to learn a trade.
Today, as one of the few women in the region certified as a Q-grader, she introduces modern processes and exotic varieties to the La Correa farm. This Pink Bourbon is proof that technical expertise combined with hard work on the farm produces results that win quality competitions.
